Grown high above the San Juan de Limay Valley in the lush mountains of Estelí, this Catimor Natural delivers a rich fruit-forward profile with notes of plum, orange, and candied yam. Roasted light to preserve its complexity and sweetness, this coffee is vibrant without being overpowering—perfect for slow mornings and intentional brewing.

    Natural (Sun-Dried Process)

    Natural process coffees are dried with the entire coffee cherry still intact, allowing the fruit sugars and organic compounds to interact with the seed throughout drying. At Finca Escénica, ripe cherries are carefully hand-selected and laid out to dry slowly under controlled conditions, where they are regularly turned to ensure even drying and fermentation. This extended fruit contact creates a cup with deeper sweetness, fuller body, and vibrant fruit character. The result is a coffee that feels expressive and layered, with rich notes that reflect both the process and the care behind it.

    Bold, Syrupy, Sweet

    How to Brew:
    1. Dose 18–20 g fine-ground coffee into the portafilter and tamp firmly.
    2. Extract 36–40 g of espresso in 25–30 s (≈ 1 : 2 brew ratio) at ~9 bar and 93 °C.
    3. Serve immediately to enjoy the rich crema and balanced sweetness.
  • French Press

    Profile:

    Full-bodied · Smooth · Rich

    How to Brew:
    1. Pre-heat the press, then add 20 g medium-ground coffee (ratio 1 : 15).
    2. Start the timer and pour 300 g water at 96 °C, fully saturating the grounds.
    3. At 2 min, give one gentle stir; at 2 min 20 s, press slowly for ~15 s.
    4. Decant right away to keep flavors clean and sweet.

    Profile:

    Clean · Bright · Floral

    How to Brew:
    1. Rinse the filter; add 20 g medium-coarse coffee.
    2. Bloom with 40 g of the total 300 g water for 30 s (overall 1 : 15, 94 °C).
    3. Pour the remaining water in steady circles, finishing by ~1 min 30 s.
    4. Draw-down should complete around 3 min 30 s for a crisp, aromatic cup.

    How to Brew:
    1. Rinse the V60 filter; add 20 g medium-fine coffee.
    2. Bloom with 40 g of 300 g total water (94 °C) for 30 s—ratio 1 : 15.
    3. Continue slow-pours, finishing by ~1 min 30 s; draw-down ends at 2 min 20 s.
    4. Enjoy a bright, well-balanced cup with delicate sweetness.

    How to Brew:
    1. With the plunger set at “4,” add 18 g medium-fine coffee.

    3. Fill to 270 g, stir 10 times, cap with filter.
    4. At 1 min 30 s, flip and press over 30 s; total brew time 2 min.

All our coffees are roasted to order. After you place an order, we roast Monday–Thursday and ship on our regular shipping days. This ensures that you get fresh roasted coffees.

Our shipping days are Wednesdays and Fridays.
