Say hello to a coffee that’s as vibrant as it is thoughtful. Nicaragua - San José - CM Natural is a standout Caturra lot from the hills of Dipilto, crafted using the Carbonic Maceration Natural process—a method that brings out an incredible depth of flavor and aromatic complexity.
In the cup, you’ll find a lively dance of crisp apple, warm baker’s spice, and a zesty, dessert-like finish reminiscent of key lime pie. It’s a clean, fruit-forward profile that showcases both terroir and technique in perfect harmony.
This coffee comes to us from Finca San José, one of three farms operated by Grupo Dipilto, a family-run project led by Eudoro Guillén. Located between 1,200–1,400 meters above sea level, the farm has a long and inspiring history—beginning with Eudoro’s father, a self-made entrepreneur who planted the family’s coffee roots in the 1960s.
After taking over the farms in 2008, Eudoro committed to pushing quality forward, experimenting with advanced processing and earning multiple Cup of Excellence awards along the way. San José is managed by longtime caretaker Don Roberto, who, alongside his wife Doña Isabel, has been part of the farm’s heartbeat for decades.
The Carbonic Maceration Natural process used here involves fermenting whole coffee cherries in sealed tanks filled with carbon dioxide, before slow drying. This technique allows for precise control over fermentation, resulting in a cup that’s bold, sweet, and layered with complexity.
Shade-grown under native trees, farmed with environmental care, and processed with innovation—this coffee is the result of passion, precision, and a deep respect for people and place.
